REENOCK farmers Bill and
Lorelie Larsson have been
running Dexter cattle for 17
years and say they are a perfect
breed for small-scale farmers.
Before starting up with Dexters,
they ran Charolais cattle.
"In 1993 we got into Dexters
because we wanted to show cattle
and it was too hard to cart Charolais
around," Lorelie said.
"We had a horse float and Dexters
fitted in it."
Lorelie said there was one thing
people should be aware of when
"When you put steers through the
general market, if you don't put
them over the scales you don't get
the money they are worth, because
of their size," she said.
Dexters are an Irish breed, with
the first recordings of them dating
back to the 1880s.
Lorelie said Dexters were ideal for
anybody with five hectares or more.
"They are perfect for hobby farm-
ers," she said.
"They fit into a freezer nicely. They
are wonderful for a family, have a
good temperament and are an easy-

buy them for their meat, or who
want to buy a steer if they've got a
bit of grass," Lorelie said.

want to start breeding."

ty of positive feedback about Dexter
"Everybody who eats it says it's a
wonderful meat, very flavoursome,"
"The main thing with the Dexters
is the size of their cuts -- they offer
very family-friendly size cuts."
A 15 to 16 month-old steer cut
180 kilograms to 220kg of meat.
"So you don't have to look to go
halves with a neighbour," Bill said.

Lorelie said running Dexters was a
good way for people with smaller
blocks to make use of their land.
"They are less intimidating than
the bigger breeds," she said.

Bill and Lorelie Larsson say Dexters are great for smaller blocks, as they are easy care and offer smaller cuts of meat.

Sell 'over the scales'
WHEN the Barossa Farmers Market started up eight years ago, Lorelie and Bill
Larsson wasted no time in getting involved.
Lorelie started off producing dried fruit and chocolates for the market.
"But that stopped when the drought came and we no longer had any water
in our dam to irrigate the trees," she said.
Today, the Larssons sell a huge range of vegetables and herbs. While most
sales are through the market, they also sell to local restaurants.
"It's been far more viable to sell vegetables rather than dried fruit, because
with dried fruit you're competing with imported product," Lorelie said.
"Our rocket is popular and we sell as much as we can bring."
Most of the vegetables are kept under shadecloths to protect them from the
sun and very little spraying is carried out.
After picking, a flame thrower is used on the ground to get rid of any pests.
Vegetables are rinsed with rainwater before being packed.
The market regularly attracts 3000 people, and the Larssons sell 15 kilo-
grams to 17kg of salad right through winter, up to 25-30kg in summer.
The Barossa Farmers Market is held every Saturday morning from 7.30am to
